My favorite Lemon Olive Oil Cake Recipe
I have made this cake like a million times and it still stands as the best cake ever. Everyone I have given this to is obsessed with it.
Ingredients:
3 eggs
1 1/2 cups olive oil
1 1/4 cups sugar
1 1/4 cups whole milk
2 tsp vanilla
Juice and zest of 3 lemons (don’t use less than this 3 lemons makes it soo good and lemony)
2 cups flour
1 tsp salt
1/2 tsp baking soda
1/2 tsp baking powder
Instructions:
1) Preheat the oven to 375.
2) Mix the wet ingredients and sugar until lighter in color and fluffy. Stir in the dry ingredients until thoroughly combined but not overmixed. Pour into a 9-inch cake round that is well-oiled.
3) Bake for 30-40 minutes or until golden brown on top.
4) I frosted this cake, but it’s so fudgy that it doesn’t need icing, just a dusting of powder sugar is so delicious!
