Miso Chocolate Mousse

Ingredients:

  • 1/2 cup dark chocolate chips (I used 60%)

  • 3 eggs

  • 2 tbsp caster sugar

  • 1/2 tbsp miso 

Instructions:

  1. Melt the chocolate either over a double boiler or in the microwave.

  2. Separate the egg whites and yolks into two bowls. 

  3. Whip the egg whites to a medium peak with a hand mixer. Check you’ve reached this point by stopping the mixer, and pick the beaters straight up out of the bowl. A peak should begin to form but the top will fold over itself. 

  4. When you’ve reached a medium peak, add the sugar. Mix again for about 10 seconds until combined. Be careful not to overmix, as moisture will start to release from the egg whites and they will not create a light and airy mousse. 

  5. Mix the melted chocolate with the egg yolks and miso until fully combined. 

  6. Take one spoon of the egg whites and mix it into the chocolate mixture, this is letting down the mixture and for this spoon of egg whites, you don’t need to be as delicate. 

  7. Now gently fold in the rest of the egg whites. 

  8. Chill the mousse in the bowl you made it in overnight and serve the next day.
