Hazelnut Brittle
Ingredients:
1 cup sugar
1/2 cup water
1/2 cup golden syrup/light corn syrup
1 cup hazelnuts
1 tbsp butter
1 tsp vanilla
1 1/2 tsp bicarb/baking soda
Flaky Salt for topping (optional)
Instructions:
Measure out all of your ingredients.
In a saucepan, combine the sugar, water, and golden syrup.
Over a medium heat, dissolve the sugar and syrup. Swirl the pan often to help the sugar and syrup dissolve. You don’t need to stir, the ingredients will dissolve and you can avoid a sticky spatula.
Once the ingredients have dissolved, bring the mixture up to a boil. Swirl your pan occasionally and boil until it reaches 120 degrees C/250 F. Once it reaches 120, add in the hazelnuts and stir to combine. Continue boiling the mixture until it reaches 150 degrees C/300 F.
Remove the mixture from heat and quickly add in the butter, vanilla, and bicarb/baking soda. Gently stir and allow it to bubble for a few seconds. Spread onto a baking sheet into an even layer and let it cool until completely hardened. Enjoy!
