Brioche Rolls Recipe
Ingredients:
3 1/3 cups AP flour
1.5 tsp instant yeast
2 Tbsp sugar
1.5 tsp kosher salt
5 tbsp butter divided
3 tbsp heavy cream
1 cup water
2 eggs
75 g sourdough starter (I don’t think this needs to be exact)
Directions:
1) Whisk together flour, yeast, sugar, and salt.
2) Heat 3 tbsp of the butter and heavy cream in a saucepan until the butter is melted.
3) Whisk together water and one egg. Add the butter and heavy cream and whisk until combined. At this point I added in the sourdough starter and whisked it in.
4) Pour the liquids over the flour mixture and stir until no dry ingredients are left and the dough is sticky.
5) Cover the bowl with plastic wrap and let the dough rise for around 4 hours or double in size.
6) Put the dough on a clean, floured surface and shape it into a smooth rectangle. Divide the dough into 8 equal pieces (I used a kitchen scale). Roll out each piece of dough into an oval shape, fold the long side into the middle, and tuck in the edges to create a roll shape. Place each roll onto a prepared baking sheet and allow the dough to rise for about 1 more hour.
7) When the dough is ready, preheat the oven to 375 degrees and eggwash it. You can also add sesame seeds to the top of the rolls. Bake for about 15 minutes or until golden brown, flipping the pan halfway through.
8) After baking, you can either top them with melted butter right away or toast each side, depending on what you're using them for. Enjoy!
