Antipasto Pasta Salad Recipe

This is the perfect summer pasta salad! This salad is super low maintenance and can be made in one bowl. Adjust the quantities of any of the ingredients depending on what you like! Lastly, this pasta salad gets better with time, so make sure you save some for lunch the next day!

Ingredients:

1 box Orchiette

2 cups cherry tomato

1/2 cup sundried tomato

1/2 cup roasted red pepper

2 cups mozz

1/2 red onion

1 cup salami

2 cups basil

1/4 cup artichokes

1/4 cup olive oil

1.4 cup balsamic vinegar

salt and pepper to taste

Instructions:

  1. Cook your pasta in salted water until al dente

  2. Chop all of the vegetables, meats, and cheese into cubes

  3. Toss the olive oil, balsamic, pasta, vegetables, meats, and cheese together

  4. Enjoy right away or let it rest in the fridge for a few hours
