Carnitas Recipe
Ingredients:
4 pound pork shoulder
1 ham hock
1 onion
4 garlic cloves
2 bay leaves
2 tsp oregano
2 tsp cumin
1 tsp paprika
Juice of 1 lime
Juice of 1/2 orange
4 cups chicken stock or until meat is covered
Salt and pepper to taste
Directions:
1) Preheat your oven to 300 degrees.
2) Cut your pork into cubes and combine all ingredients in a large Dutch oven.
3) Bring the ingredients to a simmer, and then cover the pot and transfer into the oven.
4) After 2-3 hours, your meat should be tender (if not, continue cooking). Remove the meat from the pot and onto a sheet tray, only leaving the cooking liquid in the pot. Bring the cooking liquid to a simmer and cook until reduced and syrupy. In the meantime, shred your carnitas meat. Once the cooking liquid is thickened, return the meat to the pot. Enjoy with your favorite toppings or with tortillas!
