Zaatar Cucumber Salad with Yogurt

Ingredients:

  • 1/2 English cucumber

  • 1/4 cup olive oil

  • 1 tbsp zaatar

  • About 8 fresh mint leaves

  • About 1/4 bunch fresh cilantro

  • A few fresh dill sprigs

  • Small pinch of chili flakes

  • 2 tsp red wine vinegar

  • 1/2 cup thick yogurt

  • About 2 tbsp lemon juice

  • 1 tbsp zaatar

  • 2 oz feta (optional) 

  • Salt and pepper to taste

Instructions:

  1. Smash and chop your cucumber. 

  2. Chiffonade your mint and finely chop the dill and cilantro. 

  3. Into the olive oil, add the zaatar, fresh herbs, vinegar, and salt

  4. Add and toss the cucumbers into the oil mixture. Taste for seasoning. Add more salt if the mixture lacks flavor or is too acidic, and more vinegar if it tastes too oily. 

  5. Prepare the yogurt by mixing it with lemon juice, salt, and pepper. Again, taste for seasoning and adjust. 

  6. Serve by placing the yogurt down onto a serving plate, then top with the cucumbers and feta, alternating between the two to create layers. Finish by drizzling with the remaining herb & zaatar oil.
