Curry and Peanut Udon Noodles

Ingredients:

  • 1 tbsp peanut butter

  • 1 tbsp red curry paste

  • 1 tbsp soy sauce

  • About 1 tsp ginger, grated

  • 1 clove garlic, grated

  • 1 cup broth, I used beef but think any broth would work

  • 1/4 cup milk, I used whole because that’s what I had but coconut would be ideal

  • Juice of 1 lime

  • Salt and Pepper to taste

Toppings (optional):

  • Black and white sesame seeds

  • Chili Oil

  • Steak, or protein of choice

  • Freshly ground black pepper

  • Flaky salt

Instructions:

  1. Heat a pan to medium heat, and add peanut butter, red curry paste, soy sauce, ginger, and garlic. Stir to combine, and cook for about 1 minute.

  2. Add the broth and milk and bring to a simmer. Let that go for about 10 minutes or until it has slightly thickened. Add the lime juice and stir to combine. At this point, taste the broth and adjust the seasoning.

  3. Add the udon noodles and cook for 2-3 minutes, or until they have separated and become soft. 

  4. Plate the Noodles and top them with steak/any protein, chili oil, flaky salt, pepper, and sesame seeds.
