Almond Croissant Tarte

Ingredients:

  • 1 sheet puff pastry 

  • 4 tbsp rum 

  • 2 tbsp sugar

  • 1 cup water

  • 2/3 cup almond

  • 1/2 cup sugar

  • Pinch salt

  • 1 tsp almond extract

  • 1 stick unsalted butter, sliced

  • 2 eggs

  • 1/4 cup sliced almonds (or enough to cover tarte) 

  • Powdered sugar for dusting

Directions:

  1. Soak almonds in hot water for at least 15 minutes.

  2. Preheat your oven to 375 degrees F.

  3. In a saucepan, combine the 1 cup water, 2 tbsp sugar, and rum and heat until sugar is dissolved. 

  4. Bake the puff pastry for 12 minutes until slightly golden brown. 

  5. Begin making your filling while the puff pastry is baking. Add the almonds, sugar, salt, and vanilla extract. Blend until the almonds are finely ground. Add the butter slices. Blend again. Add the eggs one at a time blending after each addition until you achieve a smooth filling.

  6. Take the pastry out of the oven and spread the filling evenly, topping with sliced almonds. Return to the oven for about 10 more minutes or until golden brown. 

  7. Let cool for 10 minutes, dust with powdered sugar and enjoy!
